What Is Mace?

Mace is the dried, lace-like aril that wraps around the seed of the nutmeg fruit (Myristica fragrans). When the ripe nutmeg fruit splits open, the bright crimson web of mace is carefully separated from the hard nutmeg seed beneath it. Once dried, the aril turns from red to a warm orange-amber and develops the complex, aromatic flavor profile that has made it one of the most valued spices in global trade for centuries.
Where Does Mace Come From?
Indonesia is the world's largest producer of mace, accounting for roughly 75% of global supply. The nutmeg tree thrives in the volcanic soils and humid tropical climate of the Maluku Islands (historically called the Spice Islands) and parts of Sulawesi, Papua, and Java. Indonesian mace, sometimes marketed as "Banda mace" after the Banda Islands where the spice trade originated, is widely regarded as the benchmark for quality.
